Basic Tea Preparation

The basic rule of thumb to start is 'one teaspoon of loose-leaf tea per cup'. Adjust this amount based on your personal preference.

*For black and oolong teas, bring fresh, cold water to the boil and steep tea for 3 - 5 minutes (black) or 2 - 5 minutes (oolong).

*For white and green teas, use water when it just starts to steam, and steep for 2 - 5 minutes (white) or 1 - 3 minutes (green).

If it tastes bitter, it has probably steeped for too long. As with so many things, brewing is also a matter of personal taste!

Keeping Tea Fresh

The enemies of tea are heat, light, air, and moisture. When storing tea, bear these things in mind and keep tea in air-tight containers in a cool, dry place. Do not store tea in glass jars or near the stove. With these simple rules in place, the pleasure of fresh-tasting tea will be yours!

Preparation and Care of Teaware

When preparing for tea, don't forget your teapot and cups! To protect these items from cracking (or worse!), and to keep your tea hot as long as possible, fill your teapot and cups with hot tap water (not boiling) and allow them to warm as you wait for the kettle to boil.
